One Pot Vegetarian Meal with Halloumi Cheese and Pumpkin

An easy and mess free meal, made from what we had in the fridge. Rich in taste and colorful on the plate.

  • 1/4 red cabbage
  • 300 g pumpkin of choice
  • 2 red onions
  • 1 broccoli
  • 1 lemon
  • 1 courgette
  • 4 potatoes
  • 400 g halloumi cheese
  • 2 cloves garlic
  • 1/2 cup olive oil
  • salt
  • pepper
  1. Set the oven to 390°F (200°C).

  2. Shred the cabbage, cut the pumpkin in large chunks, the onions, potatoes and the lemon in quarters and the broccoli in small "trees". 

  3. Slice the broccoli stem and the courgette into half inch slices.

  4. Optional: Put the whole chunks of halloumi cheese in a skillet just to give them some color.

  5. Put everything in a pan, greased with olive oil and throw it around a little. 

  6. Crush the garlic cloves with the side of your knife and throw it in the pan.

  7. Season with salt and pepper of taste.

  8. Let the pan stay in the oven for about 30 minutes.

  9. Take it all out and serve.
